“Best of Beef” awarded to Scottsbluff High School at ProStart competition

The Nebraska State ProStart® competition was held at the Central Community College in Hastings on February 8th and 9th. ProStart® is a career and technical education program that teaches high school students culinary skills and restaurant management principles, as well as employability skills such as communication, teamwork, and professionalism. There are over 40 Nebraska schools currently offering this curriculum. The Nebraska Hospitality Education Foundation sponsored competition provides a way for students to test their culinary and foodservice management skills while being evaluated by industry professionals.   


Each year the Nebraska Beef Council supports the ProStart® competition by offering a “Best of Beef” award that goes to the team who prepares the best beef entrée. The award consists of a plaque and a voucher for beef product that the students can use when practicing beef cookery in the classroom. This year’s winner was “The Wonky Waffles,” a four-member team from Scottsbluff who prepared a savory potato waffle topped with slices of strip steak and a Béarnaise sauce. The restaurant-style dish was prepared along with an appetizer and dessert in just under an hour using only butane cook tops and limited cooking utensils. The team also took home the best entrée award and was selected as one of the top teams in the state competing for the national ProStart® Invitational in Washington DC later this spring.   

 Other schools with teams competing at the state competition included Lincoln Southwest, Lincoln Northstar and Milford High School.

The Nebraska Beef Council is a non-profit organization served by a nine-member board of directors. The volunteers oversee the beef checkoff in Nebraska and checkoff-funded programs. Programs for marketing and promotion are funded by the $1/head beef checkoff.
