Chopped Salad Beef Hoagies

This fresh beef filling is loaded with salad toppings and tucked inside a soft hoagie roll.

Ingredients:

  • 1-1/2 pounds Cooked (Leftover) Roast Beef, chopped
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 2 tablespoons dried chives
  • 2 tablespoons dried parsley leaves
  • 2 tablespoons red wine vinegar
  • 4-1/2 teaspoons steak seasoning blend
  • 2 tablespoons fresh lemon juice
  • 2 hard-cooked eggs, chopped
  • 1 avocado, pitted, chopped
  • 1 cup shredded iceburg lettuce
  • 1 cup chopped tomatoes
  • 1 cup cubed Cheddar cheese
  • 1/2 cup fully cooked, chopped Beef Bacon
  • 1/2 cup chopped red onion
  • 8 hoagie rolls

Cooking:

  1. Combine mayonnaise, sour cream, vinegar, chives, parsley, steak seasoning and lemon juice in a large bowl until blended. 

  2. Mix remaining ingredients in large bowl; toss gently to combine. Divide mixture evenly and place inside hoagie rolls.

    Cook's Tip: This recipe works well with prepared roast beef purchased from the deli section of your local grocery store.

    Serve filling over lettuce leaves or in jars at your next family gathering.
