Shepherd's Pie

"This recipe for Beef Shepherd's Pie is a hearty meal perfect for a cold winter evening.  A rich and flavorful thick gravy with ground beef and vegetables topped with creamy mashed potatoes and cheddar cheese is the ultimate comfort food!"

Ingredients:

  • 2 lb ground beef
  • 1 tsp salt
  • 1 onion, diced
  • 2 tsp minced garlic
  • 4 tsp tomato paste
  • 1 1/2 tsp dried rosemary
  • 3/4 tsp dried thyme
  • 2 tbsp Worcestershire sauce
  • 1 cup beef broth
  • 1 tbsp corn starch
  • 1 can corn or frozen corn
  • Frozen peas & carrots
  • Cheddar cheese
  • Prepared mashed potatoes

Cooking:

  1. Brown ground beef in skillet; drain.
  2. Sauté onions, garlic. Add peas, carrots, corn, tomato paste and seasonings. 
  3. Add ground beef back to the skillet with Worcestershire sauce and stir until combined 
  4. Combine beef broth and corn starch. add to skillet. Stir until thick. Turn off heat. 
  5. Spread mashed potatoes over filling and top with cheddar cheese.
  6. Bake at 350 degrees for 20-25 min.
