Sonja's Scooper Beef

"The ranching life is the only life for me. I love to garden, work in the yard and make jewelry. I don't help as much with cattle as I used to - I leave that up to the guys and hired man. When I'm in the kitchen, I usually cook from scratch. Here on the ranch, we eat a lot of beef: roasts, steaks and burgers. I still cook the old-fashioned way with meat, potatoes, vegetables and a salad. This is one of my favorite appetizers to serve when we all get together. It's almost a meal in itself!   • 2 lbs ground beef (cooled)
  • 3 packages cream cheese
  • 3/4 cup milk
  • 1 large can green chiles
  • Shredded lettuce
  • Chopped onion
  • Chopped tomatoes
  • 1 jar taco sauce
  • Shredded cheese


  1. Combine cream cheese and milk
  2. Spread cream cheese mixture evenly on plate or pizza pan
  3. Top with 1/2 of ground beef
  4. Layer green chiles, tomatoes, lettuce, onion, taco sauce and shredded cheese
  5. Top with remaining ground beef
  6. Cover with aluminum foil and refrigerate until ready to serve. Serve with tortilla chips.
