Chili Salsa Beef

"I love this recipe because it’s something different and it’s super easy to prepare. Our family eats a lot of beef so I try to find new and creative ways to include it in our meals. Sometimes I cut steaks into cubes but a package of stew meats works just as well. I hope you enjoy this recipe as much as we do!" - Karna Dam, Hooper, NE

Ingredients:

  • 1 1/2 lbs boneless beef sirloin
  • 1 Tbsp Olive oil
  • 1 cup Picante / Salsa 
  • 2 Tbsp Packed brown sugar
  • 1 Tbsp Reduced-sodium soy sauce
  • 1 Garlic Clove, crushed 
  • 1/3 cup Coarsely chopped cilantro
  • 2 Tbsp Fresh Lime Juice
  • 2 cups Cooked Rice

Cooking:

  1. Trim fat from beef.  Cut into 1-inch pieces.  In Dutch oven or electric skillet, heat oil over medium heat until hot.  Add beef and brown evenly, stirring occasionally.  Pour off drippings, if necessary.
  2. Stir salsa/picante, sugar, soy sauce, and garlic into beef.  Bring to a boil; reduce heat to low.  Cover tightly and simmer 30 minutes.  Remove cover; continue cooking, uncovered.
  3. Remove from heat; stir in chopped cilantro and lime juice.  Spoon beef mixture over rice; garnish with cilantro sprigs, if desired.
