Beef'd up Loaded Potato

Ingredients:

  • 4 large potatoes 
  • 1 lb ground beef 
  • 1 c. salsa 
  • ½ c shredded cheddar cheese 
  • Salt and Pepper

Cooking:

  1. Place potatoes in aluminum foil and bake in 350 oven for 1 hour. 
  2. Brown ground beef, remove drippings, add salsa and stir and heat through.  
  3. Open up potatoes, pour ground beef mixture over the top.  Add cheese and place in microwave for 30 seconds to melt the cheese. 

Cook's Tip: Cooking times are for fresh or thoroughly thawed Ground Beef. Ground Beef should be cooked to an internal temperature of 160°F. Color is not a reliable indicator of Ground Beef doneness.
