Hamburger Florentine Soup

Ingredients:

  • 2 lbs ground beef, browned and drained
  • 4 cups cubed potatoes
  • 2 cups chopped carrots
  • 2 cups chopped celery
  • 1/2 cup instant pearl barley
  • 1 can diced tomatoes with green chilies
  • 1 can diced tomatoes
  • 1 can cut green beans
  • 1 package frozen chopped spinach
  • 1 packet onion soup mix
  • 1 tsp basil
  • 1 tsp thyme
  • 2 bay leaves
  • Salt & pepper
  • Water

Cooking:

  1. Combine ingredients into slow cooker
  2. Add enough water to cover ingredients (more to make it soupier)
  3. Cook on high 3-4 hours or on low 4-6 hours
