Corn Bread Mexican Casserole

Ingredients:

Beef Mixture

  • 1 lb. ground beef
  • 1/3 c. chopped onion
  • 1/3 c. chopped pepper
  • 1 (16 oz) can kidney beans
  • 1 (15 oz) can tomato sauce
  • 1 Tbsp. sugar
  • 2 tsp. chili powder
  • 1 tsp. salt
  • 1/4 tsp. garlic powder
Corn Meal Mixture
  • 2 c. shredded American cheese
  • 1/2 c. corn meal
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 2/3 c. milk
  • 1 egg
  • 2 Tbsp. softened butter

Cooking:

  1. Brown ground beef, onion & pepper in cast iron skillet; drain
  2. Add remaining beef mixture ingredients.  
  3. In mixing bowl, combine corn bread ingredients reserving 1 cup cheese
  4. Pour corn meal mixture over beef mixture in skillet; top with remaining cup of cheese
  5. Bake 25 minutes at 425 degrees
